Cajun Chicken Linguineby Chef Tominique
Ingredients:
1/2 pound chicken breast
1 red pepper
1 yellow pepper
1 medium onion
1 cup fresh mushrooms
1 clove garlic
1/8 cup EV olive oil
1/2 stick butter
2 tablespoons cajun spice
1/2 tablespoon cayenne pepper
1 tablespoon pepper
1/2 pound shredded parmesan cheese
1 pint heavy whipping cream
1-1/2 pound linguine noodles
In a large non-stick frying pan, add olive oil, butter, garlic, cajun powder and chicken. Saute over medium heat until chicken is lightly brown. Add julienne cut onion and peppers. Keep on med heat and saute until veggies are soft. Add sliced fresh mushroom and cover for 5 minutes. Add cayenne pepper, whipping cream and bring up to light boil. Add cheese to thicken. Mix until dissolved. Add to cooked noodles and have at it!
* If sauce seems a bit thin, you can use a cornstarch rue to thicken. Serve with your choice of Italian bread and fresh steamed broccoli!
